Description

I’ve always had these at the catering hall were we have all of our bridal showers. Someone somehow got the recipe!

Ingredients

  • 1 bag Small Round Potatoes (2-3 Pounds), Peeled And Cut In Half
  • 1 whole Red Bell Pepper, chopped
  • 1 whole Green Bell Pepper, Chopped
  • 1 whole Onion, Sliced Thin
  • 1 package Mini Pepperoni Slices (6 Oz) Or 6 Ounces Of A Sliced Pepperoni Stick
  • 1 can Crushed Tomatoes (for 2-3 Pounds Of Potatoes Use A 14 1/2 Oz. Can)
  • Salt And Pepper, to taste
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Paprika
  • 2 Tablespoons Olive Oil

Preparation

1. In a pot of salted water, cook potatoes (peeled and cut in half) until they are half done. This will probably take about 10 minutes but test with a fork. (Do not overcook them. You will be cooking these in the oven too). Drain off the water.
2. In a 9 x 13 baking pan, add potatoes, peppers, onion, pepperoni and tomatoes.
3. Season with salt and pepper, garlic powder, and paprika (to taste). Toss.
4. Drizzle with olive oil.
5. Bake at 350F for about one hour or until potatoes are tender and vegetables are cooked.
