Description

A perfect combination of sweet potatoes, carrots and spices. A sweet-savory dish that will make you ask for seconds. This will make a great side for Thanksgiving, too!

Ingredients

  • 2 Tablespoons Oil
  • 1 teaspoon Cumin Seeds
  • 1 whole Yellow/sweet Onion
  • 2 whole Sweet Potatoes
  • 2 whole Carrots
  • ½ teaspoons Turmeric
  • 1 teaspoon Salt
  • 1 teaspoon Chili Powder
  • 2 teaspoons Garam Masala
  • 1 Tablespoon Coconut Powder, More For Garnish

Preparation

Heat oil in a pan, add cumin seeds. When they start sizzling, add the onion and fry for a minute. Then add the sweet potatoes, carrots, turmeric and salt. Mix well, cover and let cook until the vegetables are half done. Remove the lid, keep sautéing until they are done. Add the chili powder, garam masala, coconut powder and toss well. Remove from heat after a minute. Sprinkle with coconut powder and serve warm.

Note: omit the chili powder if you want a side dish and not a curry. Also, do not add curry powder in place of garam masala. They are not the same and the taste will differ considerably.

This sounds so good. I just made a fresh batch of Garam Masala too. I will have to give this a try after I pick up some sweet potatoes. Or maybe I will try it with white potatoes. Won’t be as sweet but I bet it would still be yummy. I will let you know if I try it that way. ;)

Sweet and spicy at the same time. I loved this curry. It was a nice change to have this with veggie burgers rather than plain sweet potato fries.
