Description

This is a wonderful savory side dish. It’s perfect with baked ham or chicken. It is a must have at our family gatherings. The colors in this dish really make it pop!

Ingredients

  • 1 pound Breakfast Sausage
  • ½ whole Onion, Chopped
  • ½ whole Green Bell Pepper, Chopped
  • 1 can (10 Oz. Size) Cream Of Mushroom Soup
  • 1 package Saffron Rice (I Use Mahatma 5oz Pkg)
  • 1 jar Cheez Whiz (8ozs)
  • 1 jar Diced Pimentos (4ozs)

Preparation

1) Cook rice according to package directions.

2) Brown sausage over medium heat and once it is browned, remove sausage from the pan with a large spoon, reserving the drippings in the pan. Set the sausage aside in a bowl.

3) Saute onion and bell pepper in remaining drippings over medium heat until tender.

4) Mix all ingredients (cooked rice, sausage, veggies and the Cheez Whiz and pimentos) in a large bowl and transfer to a greased 9×13 casserole dish.

5) Bake at 350F for 30 minutes.
