A slice of full-on sweet potatoes with the wonderful aromatic oils of rosemary. It’s like sweet potatoes got all dressed up for a night on the town.
Heat oven at 400ºF. Butter a 9″ springform pan.
Melt butter in a skillet and sauté leeks and rosemary until leeks are translucent and fragrant, about 8 minutes. Season with salt. If pan is too dry, add a splash of broth or water,
Transfer leeks to a large bowl. Combine Havarti cheese and heavy cream and add to the bowl. Stir until well combined and smooth. Add sweet potato slices to leek mixture, toss making sure that potato slices are evenly coated.
Arrange potatoes in buttered pan, slightly overlapping in layers. Top with a sprinkle of cheese and minced rosemary. Cover with foil, bake for 30 minutes. Remove foil and bake an additional 5-10 until brown. Run knife along edge of pan, release springform, and serve.
While my hubby used frozen fries (which also work great), this recipe starts from scratch, because I have plenty of potatoes in the bin. The fries come out crisp without being fried while the seasoning adds a nice flavor with a little kick of spice. This recipe will please husbands, wives, kids … even in-laws!

This is a healthier version of the croquettes you know and love. Using leftover mashed potatoes they go together in a snap.
Serve Baked Potato Croquettes as an appetizer or as a side dish. Or they can even be a complete meal when served on a bed of Swiss chard, with a drizzle of Romesco sauce and a topping of crispy prosciutto!
