Description

Perfectly roasted young potatoes with a crispy delicate skin.

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 pounds Young Potatoes
  • ½ teaspoons Dried Thyme
  • ½ teaspoons Dried Rosemary
  • Salt And Pepper, to taste
  • 2 Tablespoons Fresh Parsley Leaves, Finely Diced

Preparation

Preheat oven to 400ºF.

Spread olive oil all over a large baking pan. Add potatoes and shake the pan to get the potatoes covered in oil. Season with dried herbs, salt and pepper. Shake the pan again.

Bake at 400ºF for 25 minutes, or until potatoes are fork tender and skins are crispy. Toss with fresh parsley. Serve hot.
