Description

Sometimes when you’re cooking steak or brisket or roasted chicken for dinner, you just want a side dish that doesn’t require one ounce of thought.

Ingredients

  • Potatoes (number And Variety Of Your Choosing: Russets Work Well)
  • ¼ cups (approximately) Olive Oil
  • Salt To Taste
  • Fresh Herbs, to taste
  • Optional Ingredients
  • 2 Tablespoons Melted Butter
  • Garlic, Minced
  • 2 Tablespoons (to 3 Tablespoons) Balsamic Vinegar
  • Cayenne Pepper
  • Paprika

Preparation

Preheat oven to 450 degrees

Wash potatoes.
Cut potatoes into wedges.
Toss with oil, butter, salt, pepper, and whatever else you’d like: garlic, balsamic, spices, etc.
Roast for 15 minutes.
Shake around. Stir.
Roast for another 20 minutes. Check ‘em. Keep cookin’ ‘em.
Take ‘em out. Check the seasoning. Add more if necessary.
Sprinkle with herbs.
Serve immediately.

My kids (and hubby) loved these. I just used olive oil, garlic and salt & pepper. Very very simple. A great way to use up potatoes. Thanks for the recipe.

We make these regularly…..and also sometimes sprinkle on DIFFERENT herbies or spiceees:

paprika (Peppy Potatoes)
chili powder (Chili Potatoes…or Chilly, depending on the weather!!!)
thyme (Thyme for Potatoes)
chili powder, basil & oregano (Pizza Potatoes)
garlic powder (Garlicky Potatoes–you didn’t see that one coming, did you?)

Skip the balsamic vinegar, and it has a whole ‘nuther flavor, too!

These were tasty! They did stick to the pan. I followed directions I promise! I think next time I’ll try parchment paper underneath. Thank you for a quick easy recipe!
