Description

It may sound a bit odd but I promise, you won’t be disappointed. This roasted Mexican cauliflower is a delicious side dish to any Mexican meal. It is so easy to make, and did I mention, healthy? My cauliflower-hating husband loves this, so don’t let your loathing of cauliflower stop you from trying it.

Ingredients

  • 1 head Cauliflower
  • 2 Tablespoons Oil
  • 2 Tablespoons Dried Chives
  • 2 teaspoons Chili Powder
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Italian Seasoning
  • ½ teaspoons Cumin
  • ½ teaspoons Salt
  • 2 teaspoons Cornstarch

Preparation

Break cauliflower into small florets. Add cauliflower to large mixing bowl. Drizzle with oil and stir to coat.

In a small bowl, mix seasonings and cornstarch. Stir to combine.

Sprinkle cauliflower with some of the seasoning mixture. Stir to coat. Continue sprinkling the cauliflower and stirring until all of the seasoning has been added.

Line a baking sheet with foil for easy cleanup. Spray with cooking spray. Spread cauliflower on baking sheet in a single layer.

Bake at 400ºF for 15–20 minutes until cauliflower is tender and has a beautiful roasted color on the bottom. Serve hot with your favorite Mexican meal.

What could I use as a substitute for cornstarch? Can I leave it out? Trying to make this recipe Whole30 friendly.

This was awesome!!! Even my 4 year old LOVED it! My husband hates cauliflower but he said the seasoning was super good and I would agree. Tasted great with cauliflower but I’d also use this seasoning for potatoes or other veg.
