I made these last night with grilled steaks and goodness were they everything you said they’d be!! I didn’t have cream cheese, so I left it out and just used whole milk instead of half-and-half but they were still scrumptiously creamy! Next time I’ll use even more roasted garlic though, cause just one head wasn’t quite enough!

I made this last night with chicken in a creamy caper sauce, with broccoli. I used 4 roasted garlic heads. It was sinfully delicious. I certainly wouldn’t make it all the time with the addition of cream cheese and cream. However, it was a special dinner and so was worth all the extra fat and calories. My teens were surprised to hear there were 4 heads of roasted garlic as it was a a nice garlic mellow flavor- they thought it would be strong and it wasn’t.

I made these last Thanksgiving and can’t wait to make them again this week! They’re definitely naughty with all that cream cheese, butter, and cream… but for a special once-a-year treat, they’re absolutely perfect. I’m making 15 pounds of them on Thursday!

If you are looking for a special mashed potato, this is IT! Wow! I could have eaten the whole amount…for our needs, I halved all quantities and only roasted one bulb of garlic, but OH MY, these were incredible. Served with the Onion and Bleu Cheese sauce for steak.

These were delicious! I forgot to add salt when the potatoes were boiling, and you really need to, otherwise it is really difficult to add enough later to get the flavor right.
