Description

Roasting the green beans and shiitake mushrooms intensifies this great flavor combo and makes for a perfect side for steak and chicken.

Ingredients

  • 1 pound Green Beans
  • 4 ounces, weight Shiitake Mushrooms
  • 2 cloves Garlic
  • 1 Tablespoon Extra Virgin Olive Oil
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Ground Black Pepper

Preparation

Preheat oven to 400°F.

Wash, dry, trim the ends of the green beans and place in a large bowl.

Using a damp towel, brush any dirt off the mushrooms. With a knife, slice the mushrooms in large bite-sized pieces. Place in the same bowl as the green beans.

Finely, chop the garlic cloves and place in the same bowl.

Add olive oil, salt and pepper and toss.

Pour the mixture onto a baking sheet and place in the oven. Roast for 20 minutes or until the green beans are tender.

Oh, I am making this at LEAST once a week this summer! I LOVE greenbeans when they’re sautee’d quickly with olive oil & garlic in a hot pan… this looks just as yummy, with a little something extra from the mushrooms. A great way to use up all the beans my garden is going to be throwing at me in a few weeks! Can’t wait to try!

This was delicious, the added flavor from the mushrooms was perfect. The only thing I have never been able to get my 6 year old to eat is mushrooms and he loved these!
