Description

A light and quick salad that pairs well with chicken, or as a meal by itself!

Ingredients

  • 1 box Rice-a-Roni; Chicken Flavor, 6-7 Ounce Box
  • 1  Green Bell Pepper, Stems And Seeds Removed; Chopped
  • 6  Chopped Scallions Or Green Onions
  • ½ cups Mayonnaise
  • ¼ teaspoons Curry
  • 2 jars Quartered And Marinated Artichoke Hearts (7.5 Oz Jars)
  • Salt And Pepper, to taste

Preparation

Cook Rice-a-Roni according to the instructions on the box.

In a large bowl mix together all of the ingredients except the rice and artichokes.

Drain artichokes and reserve marinade. Chop the artichokes and mix them and the cooked rice into the bowl with the other ingredients. Add some of the artichoke marinade if it needs moisture. Add salt and pepper to taste. (It’s pretty salty from the rice, so you might want to taste it first.)

I must say it is a meal if you add cooked or grilled chicken. It is one our favorite quick meals.
