Description

These beans are so tasty! They have just enough of a kick, tinted with a sweetness that makes them addictive. Try them next time you have burgers, brisket, or roasted chicken.

Ingredients

  • 8 slices Peppered Bacon, Cooked
  • 1 whole Onion (small), Diced (optional)
  • 1 jar Raspberry Chipotle Sauce
  • 1 can Rotel Tomatoes (any Heat Level)
  • 32 ounces, fluid Chicken Broth
  • 6 cans Pinto Beans, Drained & Rinsed

Preparation

1. Fry up bacon until crisp; drain on paper towels. Save 1-2 T. of grease.

2. Place chopped onion in bacon grease and cook until translucent and soft.

3. In a large pot, combine all of the ingredients, except bacon. Bring to a simmer for about 30 minutes. (You may continue to cook the beans and reduce the liquid a bit, if desired.)

4. Coarsely chop bacon and mix into beans at the end of the cooking time.

5. Enjoy!

I’m so sorry I didn’t respond sooner to your question!
Obviously, the raspberry chipotle sauce is key, since it gives the beans a slight sweet taste, with a kick. Be sure to look in the marinade and bbq sauce sections at your grocery store. Wal-Mart even carries a couple brands, but I will say it can be tricky to spot on the shelves, sometimes.

Also, I normally just purchase generic brand pinto beans–no need to spend a lot, since you’ll be adding all the yummy ingredients.
But, the other night, I made a regular pot of pinto beans (you know, with a ham bone) and cornbread. We had beans leftover, so I just followed my recipe, above, but used the “from scratch” beans. Oh. My. It was even better, if possible!

Either way, these beans are really tasty! Enjoy!
