Description

You can serve this dish warm, cold, or room temp. It is a fruity delight!!!! I found a similar recipe in a Cooking Light magazine but I have tweaked it a great deal!! However–I wanted to give credit where credit is due.

Ingredients

  • 3-¼ cups Quinoa, Uncooked
  • 2 Tablespoons Grapeseed Oil (just Use The Oil Ya' Have)
  • 1 whole Onion, Diced (use A Small Cooking Onion)
  • 3 cloves Garlic, Chopped
  • 2 cups Water
  • 1 cup White Wine (I Used A Sweet Wine But Use What Ya' Have)
  • 1 teaspoon Sea Salt
  • 3 teaspoons Grapeseed Oil (for Dressing, You Can Just Use What Oil You Have
  • 5 Tablespoons Lemon Juice (I Typically Use Fresh But Have Also Used Bottled)
  • 3 teaspoons Rice Vinegar
  • ½ teaspoons Fresh Ground Pepper
  • ½ cups Dried Cherries, Chopped
  • ½ cups Dried Blueberries, Chopped
  • ½ cups Dried Cranberries, Chopped
  • ½ cups Golden Raisins, Chopped
  • 1 cup Dry-roasted Pistachios, Chopped

Preparation

1. Rinse and drain the quinoa. Heat the 2 Tablespoons oil in a large skillet over medium-high heat. Add the onion to the pan and saute’ 2 minute or until tender–throw in the chopped garlic for another 2 minutes. Add the water, wine and salt to the pan and bring to a boil. Add quinoa and cover, then reduce the heat and simmer for 15 minutes or until the liquid is absorbed and quinoa is tender. Remove from the heat and set it aside to cool just a bit.
2. Check out the magic that happens to the quinoa grain. Neato, isn’t it?!
3. Combine the remaining oil, vinegar, lemon juice, and pepper in a pretty “BIG” bowl and stir with a whisk. Add the quinoa, mixed dried fruits and the pistachios. Gently toss together.
4. Enjoy the great taste of healthy food. Oh..did I just say that??

You could always mix up the flavors–play with it and have fun!! I know I sure did!!
