Description

A quick carrot side salad. “Eh, what’s up, Doc?”

Ingredients

  • 2 cups Carrots, Grated
  • ½ cups Marinated Artichoke Hearts, Sliced
  • ¼ cups Feta Cheese, Crumbled
  • 2 teaspoons Extra Virgin Olive Oil
  • 2 teaspoons Lemon Juice
  • 2 teaspoons Artichoke Marinade, From The Jar
  • 1 pinch Ground Black Pepper To Taste
  • 1 dash Hot Sauce, Optional

Preparation

Combine grated carrots, sliced artichokes, add feta. Whisk olive oil, lemon juice, and artichoke marinade. Pour over slaw, tossing well to combine. Season to taste with pepper and hot sauce.
