Description

Purple Parsley Potatoes. Hard to say. Easy to eat.

Ingredients

  • 1-½ pound Purple Potatoes (Fingerling Or Chopped Russets Will Work, Too)
  • ½ cups Flat Leaf Parsley
  • 2 cloves Garlic, Chopped
  • ¼ cups Pine Nuts
  • ½ cups Parmesan, Grated
  • ¼ cups Olive Oil
  • 3 dashes Salt And Pepper, to taste

Preparation

Boil potatoes in water until they are tender, about 20 minutes. Drain.

Meanwhile, put remaining ingredients in a food processor and blend until everything is pureed together.

Season with salt and pepper and place in the bottom of a large bowl.

Add warm potatoes and toss in the pesto until coated.

Serve and enjoy!
