Description

Easier than mashed potatoes.

Ingredients

  • 1 bag (1.5-lb. Bag) Fingerling Or Baby Yellow Potatoes
  • ¼ cups Butter
  • 2 Tablespoons Olive Oil
  • 3 cloves Garlic, Sliced
  • 1 dash Salt And Pepper, to taste

Preparation

1. Preheat oven to 350ºF.
2. Put one potato at a time into the bowl of a spoon.
3. Make several horizontal slits on the potato. The bowl of the spoon will help ensure you do not cut completely through the potatoes.
4. Place a pan over medium heat and melt the butter.
5. Once butter is melted, pour in potatoes, oil, garlic, salt and pepper.
6. After potatoes have been thoroughly coated, pour the contents of the pan onto a baking sheet (including the butter drippings).
7. Bake for 30 minutes or until done (you will know they are done when the slits you created separate).

Yum these look so good! I don’t think I’ve ever had fingerling potatoes before! Can’t wait to try these.

They didn’t have fingerling potatoes at the store (weird since I live in Idaho) so I used smaller baking potatoes and adjusted by putting them in for 45 mintues instead of 30. The potatoes were absolutely delicious but next I WILL make them with fingerlings.

***My BF walked in while they were in the pan getting coated and commented on how good it smelled and after eating the potatoes commented on how they should become a part of my sides rotation.
