Scrub the potatoes well. Do not peel them. Cut into fourths lengthwise and toss in a bowl with remaining ingredients to coat well.
On a large (10 “) sheet of foil, place 4 potato quarters. Fold top and bottom over, and then the sides, to seal well.
Grill for 20 minutes, turning occasionally, with the grill covered.
Open carefully (they’ll be hot!) and enjoy!
