Description

Polenta is such a quick and easy side dish. I’m surprised that more people don’t enjoy it! I recently dressed up rolled polenta by adding some peaches and brushing them with honey and cinnamon, creating a sweet side dish that my family went crazy over. I found that it is good both hot and cold, and ripe peaches are a must!

Ingredients

  • 1 pound Prepared Rolled Polenta
  • ½ cups Vanilla Almond Milk (or Milk Of Preference)
  • 4 whole Ripe Peaches, Pitted And Sliced
  • 1 Tablespoon Butter, Melted
  • 2 Tablespoons Honey
  • 2 teaspoons Cinnamon

Preparation

Preheat oven to 350 F.

Put the unwrapped roll of polenta into a microwave-safe bowl and heat for 1-2 minutes, until soft. Remove bowl from the microwave. Add the milk and mash the polenta until it resembles mashed potatoes. Spread it into a 9” x 13” baking dish in a thin, even layer.

Place the peaches on top of the polenta.

In a small bowl, combine the butter, honey and cinnamon. Evenly brush the mixture over the peaches.

Bake for 25 minutes, until peaches are soft and polenta is heated through.
