Description

A wonderful side dish for any meat. Special thanks to Lizzygoesdutch from this site for the great picture of this dish. Check out her profile and her great website!

Ingredients

  • 2 cups Cooked Long Grain White Rice
  • ½ cups Finely Chopped Onion
  • 2 cups Medium Shredded Cheddar Cheese
  • 2 packages 8 Oz. Frozen Chopped Broccoli Defrosted And Well Drained
  • 1 can Cream Of Mushroom Soup
  • 1 can 5 Oz. Can Evaporated Milk
  • ½ cups Melted Butter, Divided
  • 1-½ cup Bread Crumbs

Preparation

Put the cooked rice in a deep dish type casserole.

Mix in the onion, cheese and broccoli.

Combine the soup, milk and 1/4 C of the butter. Add to the casserole and mix well.

Mix the remaining butter with the bread crumbs and sprinkle over the top of the dish.

Bake in a preheated 350 degree oven for 35-45 min. until hot and the top has browned.

Hint: Make sure the broccoli is totally dry. Hope you enjoy!

Delicious! Easy to make and very flavorful. This could be a meatless casserole with a side salad as well.

This was delicious! I added a little rotisserie chicken and used heavy cream instead of the evaporated milk and it was absolutely wonderful. With the addition of chicken it made for a great 1 dish meal!

This was delicious! I have always made broccoli & rice casserole the way my grandmother and mother did, which was with Cheez Whiz. I loved it, but wanted a recipe that actually used real cheese (what a concept!). This is it! I will officially replace the old recipe with this one in my collection. Thanks for sharing it! I did cut the butter to only two tbsp mixed in with the soup and milk and I didn’t put any on top with the bread crumbs. It was still fantastic!

Wow! I made this dish for my mother-in-law’s 88th birthday last night and everyone raved about how good it was. I even doubled the recipe, and it was all gone! The only variances from the recipe where that I used sharp cheddar and Italian seasoned bread crumbs. This tastes so much better than the Velveeta recipes. Nothing in the dish is too overpowering. Perfect balance of flavors!

This was a real hit at our house tonight. I was looking for a good broccoli and rice casserole and had read through a number before I got to this one. Very, very good and the ingredients are items I am likely to keep on hand. I made it true to the original but I also like the flexibility of the recipe as expressed by the other reviewers. Thanks!

This was delicious! I added a little rotisserie chicken and it made for a great 1 dish meal. I substituted heavy cream instead for the evaporated milk and fresh steamed broccoli for the frozen, but other than that stayed true to the original. I’ll definitely make this again.

I really enjoyed this casserole! The creaminess of the cheese sauce was really really good – definitely a kid pleaser!

I would definitely make this again, but perhaps with a mixture of different cheeses, instead of just cheddar – just for a little variety!
