Description

A yummy steakhouse style sweet potato. I love these so much that I don’t care if I eat the rest of the dinner. Goes great with ham steaks, and black eyed or green peas and deviled eggs on the side.

Ingredients

  • 3 pounds Orange Sweet Potatoes
  • 1-½ stick Butter
  • 4 Tablespoons Light Or Dark Brown Sugar
  • ¼ teaspoons Ground Nutmeg
  • ½ teaspoons Ground Cinnamon

Preparation

Wash, rinse and dry sweet potatoes. Butter the outsides of potatoes, and tightly wrap in heavy duty or nonstick aluminum foil. Place in preheated oven at 400F for 60-90 minutes. Put them on the middle rack position. Note: I use slightly large potatoes so I leave mine in for 90 minutes. Also, you may want to place a baking sheet under them so they don’t drip on your oven floor.

While potatoes are baking, mix well in a small cereal bowl the brown sugar, cinnamon and nutmeg. Set the bowl in middle of dining room table with a spoon.

When potatoes are done, remove from oven, slit the top with a steak knife and with both hands on each side push both hands towards the other to smash the potato some. Be, careful HOT. Load it up with butter and sprinkle the ‘dirt’ on top .

Oh so yummy! The combination of spices is perfect. I might try blending them in the butter next time.
