Description

Super simple and quick-to-make side dish that would go great with fish or chicken.

Ingredients

  • 1 cup Orzo Pasta (I Used Whole Wheat)
  • ½ cups Roasted Red Pepper, Diced
  • 10 whole Kalamata Olives, Finely Chopped
  • 1 clove Garlic, Finely Chopped Or Grated
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 dash Salt

Preparation

Cook orzo pasta in salted, boiling water until al dente (follow package directions). While that cooks, chop up the roasted peppers, olives, and garlic. Drain the orzo and place into a bowl. Add in the rest of the ingredients and toss together. Serve warm or at room temperature.
