Description

This is the perfect alternative if you want to eat less meat! I decided to make this the “meat” portion of my meal and paired it with a nice spinach salad. Delicious!

Ingredients

  • ¾ cups Quinoa
  • ¼ cups Mushrooms, Finely Chopped
  • ½ cups Quick Oats
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Garlic Powder
  • ¼ cups Grated Parmesan Cheese
  • 1 whole Large Egg
  • 1 Tablespoon Jalapeno, Seeded And Chopped Fine

Preparation

Prepare quinoa according to package directions. Then let it stand and cool slightly before proceeding. Measure out 3/4 cup of the cooked quinoa and put it into a bowl. Add all of the remaining ingredients. Mix by hand. The mixture will be moist and stick together slightly.

Preheat oven to 350 F. Spray cooking spray into four cups of a muffin tin. Divide the mixture evenly between the four cups. Press the mixture down so that it is compacted a little into the muffin tin. Bake at 350 F for about 20 minutes. It will become golden brown on top. When done, remove the pan from the oven and let them sit for a minute or two before removing them from the muffin tin. Makes 4 servings.
