Description

These are no ordinary mashed potatoes. I have no idea where my mom got this recipe, but it is addictive, and I can guarantee that any picky eater will love this.

Ingredients

  • 4 cups Pre-mashed Potatoes (you Can Use Instant Mashed Potatoes To Make It Easier And Quicker)
  • ½ cups Crumbled Bacon
  • ¾ cups Sour Cream
  • 4 cloves Minced Garlic
  • ½ cups Sliced Green Onion
  • 1 cup Shredded Cheddar Cheese, Plus More To Sprinkle On Top
  • Chives For Garnish

Preparation

Cook potatoes as directed (whether homemade or packaged).

Combine all ingredients. Spread in a greased cassarole pan, sprinkle with additional shredded cheese, and bake at 350ºF until warm (about 20 minutes). I placed my potatoes in individual ramekins, which are great for intimate dinner parties.

Top with chives.

These potatoes rock! Even people who don’t like mashed potatoes like this recipe. (Yes, believe it or not, I actually have a family member that doesn’t like mashed potatoes. It’s so sad!) I used about half the amount of garlic but other than that I followed the recipe as written. These mashed potatoes are pretty high-test in the calorie department so I won’t be making them all the time, but these mashed potatoes are definitely worth the caloric splurge!

YUM! i’m not an onion person so i skipped that step and used garlic instant – and this was delicious
