Description

This minty pea salad is a perfect way to balance out the hot, humid summer nights! Especially if you are in the South! Slivered almonds, fresh mint leaves and vinaigrette make the dish stand out on any table!

Ingredients

  • 2-½ cups Frozen Peas
  • ⅓ cups Chopped Mint (firmly Packed)
  • ⅓ cups Slivered Almonds
  • ⅓ cups Extra Virgin Olive Oil
  • 1 teaspoon Yellow Mustard
  • 1 teaspoon Freshly Squeezed Lemon Juice
  • 1-½ teaspoon Red Wine Vinegar
  • 1 teaspoon Honey
  • ½ teaspoons Salt, Or To Taste
  • ½ teaspoons Ground Black Pepper, Or To Taste

Preparation

1. Thaw the frozen peas.
2. Mix peas, mint and slivered almonds in a bowl.
3. Whisk the olive oil and the remaining ingredients in a small bowl.
4. Toss the pea mixture and the dressing. Cover, let it sit in the fridge for two hours before you serve.
