Description

A delicious Cajun side dish perfect for any meal or as the main dish itself.

Ingredients

  • 2 pounds Ground Beef
  • 1 pound Owens Or Other Hot Breakfast Sausage
  • 1 clove Garlic
  • 2 whole Yellow Onions, Chopped
  • ½ whole Bell Pepper, Chopped
  • 1 jar (small 4 Oz. Jar) Chopped Pimento
  • 3 cups Basmati Rice
  • 6 cups Water
  • 2 Tablespoons Chopped Green Onions
  • 1 teaspoon Cayenne Pepper
  • 3 teaspoons Black Pepper
  • 1 Tablespoon Kosher Salt

Preparation

This is my Cajun Grandmother’s recipe. She always made this for Christmas and Thanksgiving. It was always my favorite and it is now the favorite of all my guests.

Always use a heavy pot. A thin pot will only make the rice burn at the bottom. Brown all the meat. Add garlic to the pot till slightly brown. Add onions till they turn clear. Add bell pepper and pimento. Add rice and water. Add chopped green onions. Add cayenne, pepper and salt. Let water start boiling. Turn heat low. Cook for 25 minutes. Add more seasonings to taste.

Make this dish and feed the neighborhood!

My cajun Grandma (on my dad’s side) always made this at Christmas and Thanksgiving also, she also made fruit salad ( the old fashion way) as one of the many desserts. I would watch her and now I make it all the time when I want to think of you her. My grown children ask at the holidays if I am making them also and they always take some home with them, so I of course make extra. The only difference Grandma or I have never put breakfast sausage in ours and we cook the rice seperate and add it at the end after the broth has had time to reduce and get rich. But the basic recipe is the same. Oh, I was born and raised in Cameron LA, but have lived away for all of my married life. Memories are wonderful.

Oh my goodness, what a dish! This was excellent with pinto beans and cornbread. And you’re right, there was enough to feed a very large group, (there was only three of us at lunch today soooooo I have leftovers)!

I think I found what I want to make for lunch after church. Thanks for sharing this one. My folks lived in Homa, LA for a couple of years while my Dad worked on the offshore rigs and he LOVED cajun food and I know he would’ve enjoyed this.

Hey Jenqu! You inadvertantly made Jambalaya! LOL! I have just posted my recipe for Jambalaya. If you liked your changes to the rice dressing, the actual recipe for Jambalaya will make your family rave. Don’t forget the roux (most larger grocery stores carry this in a jar). It adds a richness to the recipe that can’t be duplicated. Make the actual recipe for rice dressing one day soon and you will enjoy it tremendously.

Made this tonight for dinner. Used the sausage, a lb of ground chicken, an entire unch of green onions and three chopped peppers, one orange, one yellow and one red in lieu of the pepper called for and the pimientos. It was awesome! The kids LOVED it.
