Description

My grandmother in Tuscaloosa has made this macaroni & cheese dish for every holiday and visit I can remember. It is the first to be gobbled up at the table! What’s nice about it is that it can be done right before the meal and served warm from the stove, or you can put it in a casserole dish and reheat in the microwave. For a healthier option, use 2% milk instead of half-and-half.

Ingredients

  • 2 cups Macaroni
  • ⅔ sticks Butter (no Substitute)
  • ½ cups All-purpose Flour
  • 2 teaspoons Salt
  • 2 cups Warm Half-and-half (or 2% Milk For A Healthier Option)
  • 2 cups Shredded Extra Sharp Cheddar Cheese (Cracker Barrel Brand Is Best)
  • 2 teaspoons Fresh Ground Pepper

Preparation

In a large pan, bring water to boil and add salt. Cook macaroni until al dente (just until done). Drain in a colander.

In the same pan, melt butter. Add flour until nearly all the butter is absorbed. Add salt. Stir warmed (but not boiling) half-and-half (or milk) in about 3/4 cup at a time, letting mixture thicken each time before adding more. It should be thicker than pancake batter. Add cheese and stir until melted.

Add macaroni and blend together. Season to taste with salt and fresh ground pepper.

Serve immediately without baking or put in a casserole dish and heat in the microwave. If a little dry, add more milk. Top with shredded extra sharp cheddar cheese. Don’t skimp on cheese!

@ rachelmom – My grandmother was “green” and “organic” before it was cool…i bet she has never even considered buying something as processed as Velveeta! I didn’t even know Mac & Cheese came in a box until college! But she and my grandfather are in great shape at ages 85 and 84 so…there must be something to it!

@Beignets&Lattes – I bet that would be good!

Sounds delicious – I know it’s gross, but I have never met a mac and cheese that doesn’t benefit from at least a little Velveeta. Just sayin…

This really good. I did cut back on the flour though because it kind of had too much of a flour taste for my liking. I continue to make it. Going to Kroger’s now to get the stuff to do it.
