Description

Easy and quick fried rice.

Ingredients

  • 1 can Spam, 12 Ounce Can, Cubed
  • 3 Tablespoons Olive Oil
  • 1 whole Large Onion, Chopped
  • Salt And Pepper, to taste
  • 3 cloves Garlic, Chopped
  • 1-½ cup Frozen Vegetable Medley
  • 6 cups Cooked Rice (day Old Preferred)
  • 8 whole Eggs, Whisked
  • Soy Sauce, to taste

Preparation

Note: You’ll need 2 frying pans—one high sided large pan and one medium sized non-stick pan.

Cook cubed Spam in a non stick frying pan over medium high heat until golden and crispy.

At the same time in a separate large high sided frying pan over medium heat, heat 2 tablespoons of olive oil then sauté the onion until translucent. Add a pinch of salt and some black pepper. Once translucent, add the chopped garlic and vegetable medley and cook for a minute or two in order to take the raw flavor out of the garlic. Add cooked rice into the onions and garlic and stir.

Pour the cooked Spam and any remaining oil into the rice mixture and continue stirring until all items are incorporated nicely and rice is no longer clumped together.

In the nonstick pan that you cooked the Spam in, add the remaining oil and heat over medium. Pour the mixed eggs into the pan and gently cook until they are about a third of the way done. While the eggs are still very loose, pour the eggs over the rice mixture and mix in completely. Don’t worry; the hot rice will cook the loose eggs. Cook for another 5 or so minutes, sprinkle with soy, give it a final stir and you are done!
