I wish I could leave 4 1/2 stars. These really were good, but there was WAY too much butter. There was a pool about 1/2 an inch thick in the bottom of each one. Great idea, and with less butter, they will be perfect.

Yum! I’ve made these approximately 2890847 times since finding these delicious, individual servings of potatoey goodness!
I follow the recipe exactly, making 3 layers. Well, that’s a lie, I use about 1/2 the butter. I also use red potatoes, since they’re smaller and the slices seem to fit better inside the muffin cups. Sometimes I include the onions, sometimes I don’t. Depends on who’s eating them. And the best part is since they’re individual you can fill each muffin cup to match the wishes of each eater. I also made them using sweet potatoes and brown sugar, and no onions or cheese. These are so good my daughter wants to marry them!

These are AMAZING!! I used small red potatoes because they fit in the muffin cup. I like the individual cups because they get crunchy all the way around. YUM!

This is now a staple recipe in our house. It’s much yummier as an individual serving because of the crispiness on each one. I do agree on the butter though…it’s just a little too much. I use the small white potatoes, because it is a better fit. (new potatoes)

Wonderful recipe. It is so easy to break it down to servings so now I can make scalloped potatoes for two instead of trying to get him to eat leftovers.

I think I must have done something wrong in this recipe? I microwaved them for the given time and they were QUITE done, not firm at all. This made the potatoes fall apart very easily. I know that I didn’t put the recommended amount of butter in either, and I think I should have added more cheese (though I used what the recipe called for).
The scallions I think are a MUST in this recipe. They really give a nice taste.
Other than my little potato stacks falling apart, these were little beauties! Very tasty, and one of the few potato dishes you can do most of the prep for ahead of time, which is always great for me!

This is so delicious you just KNOW it is bad for you! I accidentally overcooked my potatoes before slicing, so it was hard to get pretty slices, but let me tell you it still was delicious: drowning in butter (the one reviewer was right about the puddles of butter on the bottom of each muffin cup!) and loved the crispy cheese on top! I added little cubes of ham to it also. I think trying smaller red potatoes is a great idea.

These are one of my husbands favorite dinner additions. Thank you for sharing it with us, we eat them very often. They are so yummy and I like that they are individual. Since my hubby doesn’t like onions, we leave them out and I don’t use quite as much butter, but they still taste so good!

These are so very good! I love how each little stack gets so crispy. There’s a bit too much butter for me though, I think I will use less next time.

These are decadent! They are moist but not soggy, and so flavorful. They are also so easy that I would let my kids assemble them. I did decrease the butter by about half to trim calories (I know, sacrilege!) and they were still divine. If I were to serve these to company, I would not skimp on the butter!

These are very easy and tasty! I love how the cooking time is greatly reduced from my standard way of making scalloped potatoes – makes it “weeknight friendly”. YUM!

What a wonderful idea. We have little ones always on the go. These cheesy delights will be super easy for the little hands to hold and they can eat them on the go if need be.

These were so YUMMY!!! I made them tonight with red potatoes and heavy cream, because that’s what I had on hand. Theywere so creamy and delicious! I will definitely make these again.

Yummy! I made these for company on Saturday night. Super easy to make! I did cut back the amount of butter quite a bit. I used about 1/4 of a pat per cup. Then, before building my potatoes, I stuck the muffin pan in the oven to melt the butter. I think these would also be good with a little bacon crumbled in.

I made these for tonights dinner. The kiddos aren’t fans of green onions or anything thats green at this time. (still to young) so I substituted applewood smoked bacon for the onions. I just cooked and crumbled it on the cheese layer. What a mega hit! We had no leftovers tonight. Everyone wanted seconds and thirds! Once again thanks for the recipe. It is actually quicker than making one big cassarole.

Made these last night using muenster cuz thats what I had. I addad a few chopped mushrooms and we ate every last bite. Absolutely wonderful–and so easy to make. Thanks for the great recipe.
