Description

Sweet potatoes roasted with the tang and spice of horseradish. A perfect easy side dish!

Ingredients

  • 1-½ Tablespoon Prepared Horseradish
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Kosher Salt
  • 2 pinches Freshly Ground Pepper
  • 2 whole Sweet Potatoes Or Yams, Diced Into 1/2"-1" Cubes

Preparation

1. Preheat oven to 450ºF. Whisk together the horseradish, minced garlic, olive oil, salt and pepper to form a thick paste.
2. Toss the cubed sweet potatoes with the horseradish mixture to coat. Spread on a cookie sheet lined with Silpat, parchment or aluminum foil and bake for 20-25 minutes, turning halfway through cooking. Serve immediately.

I just finished making these. Although I think the idea of them is a good one, I think the horseradish mixture needs to be doubled. It may have been because the sweet potatoes I used were too large, or that I am a big fan of horseradish, but I had a hard time detecting the horseradish flavor. They were still good to eat, just wish there had been more flavor.
