Description

Rice-a-Roni made with brown rice, minus all the sodium and processed junk.

Ingredients

  • ½ cups Whole Wheat Spaghetti, Broken Into Pieces
  • 1 cup Brown Rice
  • 2 cups Beef Broth Or Stock
  • 1 Tablespoon Parsley
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Thyme
  • ⅓ cups Margarine Or Butter

Preparation

Preheat oven to 400 degrees. Spray a small baking dish with cooking spray. Add all ingredients; mix well and cover tightly with foil. Bake for 1 hour. Remove from oven and fluff with a fork.

I actually think I’ll make this tonight. Sounds wonderful! I’m trying to learn to make homemade versions of all my favorite prepackaged sides.

Sounds great but I think I’d try browning the rice and pasta in the butter before addeing the rest of the ingredients (like you do when you use the processed stuff). My family loves that brown, nutty flavor.

This was a great side dish! Definitley something I’ll make again.

I toasted the pasta/rice and added salt and it turned out beautifully!

This recipe was absolutely delicious. It was much tastier than Rice-a-Roni in the box, and my husband was very pleased with the dish. I was surprised that the recipe didn’t call for any salt, so I added 1/2 tsp table salt to the dish (it definitely needed it). After the added salt, it still wasn’t NEARLY as salty as Rice-a-Roni, which is good. I also followed another user’s suggestion and toasted the rice/pasta in a pan with butter. That toasted flavor is the reason we eat Rice-a-Roni! Also, I used chicken broth instead of beef broth (it’s what I had on hand–I’ll try beef if I ever serve it with a beef dish).

I definitely recommend this dish, although I think it would be better to add some salt if you aren’t carefully monitoring your sodium intake. It’s still less salty than the boxed kind. I’ll definitely be adding this to my repertoire! Thanks!
