Description

Tomatoes, garlic, onion, cilantro, salt, and pepper come together for a mouthwatering Herbed Veggie Quinoa Bowl. Perfect as a side but filling enough to be a main dish, too! Ready in 30 minutes!

Ingredients

  • 2 cups Quinoa, Cooked According To Package Instructions (see Notes Below For Details)
  • 1 clove Garlic, Pressed
  • 1 cup Grape Tomatoes Sliced
  • ½ cups Red Onion, Diced
  • ½ cups Green Onion, Sliced
  • ¼ cups Cilantro, Minced
  • 2 Tablespoons Olive Oil (optional)
  • 1 pinch Salt And Pepper, to taste

Preparation

Cook quinoa according to package directions (I have used regular and instant with success). Then stir in pressed garlic.

Prepare tomatoes, onions, and cilantro and toss with quinoa in large mixing bowl. Pour olive oil over quinoa, if desired, to keep it from drying out. Top with salt and pepper as desired and serve warm.

Note: Instructions for preparing quinoa can vary. However, for this recipe, I followed package instructions of 2 cups water for 1 cup quinoa. I brought the mixture to a boil, stirring frequently. I then let it simmer covered for about 12–15 minutes, stirring periodically. Finally, while it was still warm, I added all other ingredients and served immediately.
