Description

These homemade French fries are baked, not fried! That makes them guilt-free in my book! So easy and delicious!

Ingredients

  • 5 whole Waxy Potatoes (Medium-sized)
  • ⅔ cups Olive Oil
  • 1 Tablespoon Seasoned Salt (I Use Lawry's)

Preparation

Note: I have also used both chicken bouillon powder and chicken/beef seasoning packets in the past in place of seasoned salt and they worked splendidly. Feel free to jazz up the potatoes any way you like!

Preheat oven to 400ºF.

Peel potatoes and slice lengthwise into 1/4″ thick matchsticks.

Transfer potato matchsticks into a microwave-safe bowl and fill with water just until they cover the potatoes. Microwave on high for about 4 minutes.

Remove from the microwave and pour cold water into the bowl to stop the potatoes from cooking. Drain the water from the bowl.

Pour the olive oil in the bowl and toss the potatoes till completely coated in olive oil.

Cover a cookie sheet with aluminum foil and transfer the potatoes to the cookie sheet with a slotted spoon. Try not to let the potatoes overlap one another. Drizzle VERY lightly some of the olive oil from the bowl onto the potatoes. Sprinkle with the seasoned salt and bake for 20 minutes or until light golden brown in color.

Really good- I put them under the broiler for the last 1 minute or so and it made them even crispier.
