Description

Have you made jo jos before? If you haven’t, you should and I have just the grilled jo jo recipe for you! These potatoes are tasty and a great grill side dish! So, we do start this off on the stove top just to get a little bit of softness, but then we move it to the grill so that we can get that crispy, charred, grill taste that we love. Add in some oil and seasonings and we really have a beautiful grilled side dish.

Ingredients

  • 2  Potatoes
  • 2 Tablespoons Cornstarch
  • 1 Tablespoon Chili Powder
  • 1 Tablespoon Paprika
  • ½ teaspoons Cumin
  • ¼ cups Olive Oil
  • Salt And Pepper, to taste

Preparation

Bring pot of water to boil.

While water is heating, cut each potato into 6 wedges. Add potatoes to water and boil for no more than 5 minutes. Test with fork at 3 minutes. Should still be firm and we do not want the potatoes to be soft. Remove before they get soft.

Add potatoes and rest of ingredients to large bowl. Mix.

Preheat grill to 500ºF. Place potatoes in lightly oiled vegetable basket and cook over indirect heat. Check for doneness at 15–30 minutes.

Serve.
