Description

A recent trip through the produce section yielded some Florida avocados (you know—the big, hard as a rock green pelotas that always make you wonder what could possibly be done to make them taste good?) and some reasonably ripe tomatoes. Guacamole, you say? We say GRILL it!

Ingredients

  • 1 whole Florida Avocado, Large
  • 2 whole Vine Ripe Tomatoes, Sliced Thickly
  • 1 bunch Baby Onions Or Spring Onions
  • 1 whole Lime, Juiced
  • 1 Tablespoon Red Wine Vinegar
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Honey, Preferably Orange Blossom
  • 1 Tablespoon Fresh Cilantro, Chopped
  • ¼ teaspoons Sea Salt
  • ¼ teaspoons Fresh Ground Black Pepper

Preparation

Start by getting your grill nice and hot. Season the avocado, tomatoes and onions well with salt and pepper. Place the avocado on the hottest part of the grill and leave it alone for one full minute. Turn the avocado over and repeat for the other side, then move the slices to a cool spot on the grill and allow them to cook slowly while the other ingredients cook. Place the onions on the hot part of the grill and allow them to cook for 3 to 4 minutes, turning halfway through, then remove them. Next come the tomato slices. You want to only cook them long enough to get a char on the inner flesh and just slightly warm them—30 to 60 seconds per side is all it takes.

Remove everything from the grill and arrange on a plate. Mix the lime juice, vinegar, olive oil, honey, and cilantro in a bowl to make the dressing and season with salt and pepper. Drizzle over the veggies and you’re off and running. In our case, we’re running back to the air conditioning.

Question…do you peel the avocado before grilling?

All you have to do is let these get soft just as you do the Hass avocados and make guacamole out of them. Two makes a large bowl of guacamole. I usually try to pick out ones that give a little when you squeeze them which means they are ready. Never had a problem with them. This sounds good also though.

I live in Florida and never found much use for these big hard advocados. I have people who grow them trying to pass them off to me and I always run….. well actually politely decline but end up with 2 at least . I take them in and let them usually rot and then throw them out.
Now I can try this and I will start taking all the little suckers in every chance I get if they are as good as they look.
