Description

Growing up in an Italian family, this is the green bean casserole we ate at holiday meals. Imagine my confusion when I ate dinner at a friends house and her mother served me green bean casserole covered in fried onions.

Ingredients

  • 2 pounds Frozen Green Beans
  • 9 ounces, weight Artichoke Hearts, Chopped
  • 1 cup Extra Virgin Olive Oil
  • 1 cup Parmesan Cheese, Plus Extra For Topping
  • 8 cloves Garlic, Pressed
  • 1 cup Italian Bread Crumbs, Plus Extra For Topping
  • Salt And Pepper, to taste

Preparation

Preheat oven to 350

Blanch the green beans in boiling salted water until just tender (fresh or frozen works equally well).

Thaw & chop the artichoke hearts (used canned if you can’t find frozen, but not marinated).

In a large bowl, mix green beans, artichoke hearts, extra-virgin olive oil, Parmesan, and garlic together.

Spoon mixture into a well-greased casserole dish (9×13).

Sprinkle on additional bread crumbs & Parmesan cheese.

Cover with foil & bake at 350° for 20 minutes, then remove foil & bake for additional 20 minutes, or until breadcrumbs are golden brown.
