Description

A tempting side dish for two with any main course meal, especially with beef!

Ingredients

  • ¼ cups Low Sodium Vegetable Stock
  • 8 ounces, weight Fresh Broccoli, Rinsed And Drained
  • 1 whole Lemon, Zest And Juice
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • ¼ cups Seasoned Bread Crumbs Or Panko
  • Olive Oil, For Drizzling
  • ½ cups Feta Cheese Crumbles

Preparation

Preheat oven to 400ºF.

In a 10″ skillet (I use a cast iron skillet), add vegetable stock and broccoli spears in a single layer (it’s okay if they overlap a bit). Set aside.

In a bowl, add lemon zest and juice, salt, black pepper, and breadcrumbs or panko, using a spatula to combine. Transfer mixture over the broccoli in the skillet. Drizzle with olive oil, then add feta cheese crumbles across the top.

Cover with aluminum foil and bake for 15 minutes. Remove foil the remaining 5 minutes of bake time. Serve and enjoy!
