Peel potatoes. Cut them into quarters and set them aside.
Combine flour, cheese, salt and pepper in a zip top bag (one that’s big enough for the potatoes too). Moisten potatoes with a bit of water, put them into the bag and shake the bag to coat the potatoes with flour mixture.
Preheat oven to 375 F. Put butter in a 13×9 inch pan and put the pan into the oven as it preheats. Once butter is melted remove the pan from the oven. Place potatoes in a single layer in the pan. Bake at 375 F for one hour. Turn once during baking. When golden brown, sprinkle with parsley to serve.
