1. Peel fresh sweet potatoes and slice into 1/4″ pieces.
2. Over medium heat in a large skillet melt butter and olive oil. When oil it hot add sliced potatoes. Cook until nicely browned on each side, turning from side to side during cooking.
3. When potatoes are browned and tender sprinkle with brown sugar and continue to cook another 5 minutes until potatoes are caramelized.
