Description

A recipe I’ve adapted from my grandmother. Fried squash is one of my husband’s favorite things to eat.

Disclaimer: If you aim to lose weight, do not try this at home! Haha.

Ingredients

  • 1  Yellow Squash
  • 1 cup Flour
  • 1 cup Corn Meal
  • ½ teaspoons Black Pepper
  • 1 teaspoon Sea Salt
  • ½ cups Milk
  • ¼ cups Light Tasting Olive Oil
  • ½ cups Butter Flavored Shortening

Preparation

Slice squash into thin slices. (Cut slices in half if they’re large.) Mix flour, corn meal, black pepper, and sea salt together in a bowl. Pour milk into a separate bowl. Drop 6-8 slices of squash into the milk, then transfer the slices to the flour mixture. (I like to place them in a third bowl when I’m finished breading them.)

Once all slices are breaded, set them aside and heat the oil and butter-flavored shortening in a cast iron skillet. Once the shortening has melted, wait another 2 minutes (approximately) for the oil to warm up nicely. Then transfer the squash (all at once) in to the skillet. Stir periodically until all pieces are browned (longer if desired).

Do not worry if the breading falls off of some slices, it will still taste just fine! Use a slotted spoon to transfer squash to a bowl lined with a paper towel. Let sit a few moments and then enjoy!
