Description

A super fresh salad made with mixed cherry tomatoes, drizzled with good olive oil and aged balsamic vinegar then tossed with crumbled feta, toasted pine nuts and freshly torn basil.

Ingredients

  • 2 cups Mixed Cherry Tomatoes
  • ⅛ cups Extra Virgin Olive Oil
  • ¼ cups Balsamic Vinegar
  • 4 Tablespoons Feta, Crumbled (or To Taste)
  • ½ cups Pine Nuts, Toasted
  • 4 Tablespoons Fresh Basil, Torn Or Julienned
  • 2 pinches Salt
  • 2 pinches Freshly Ground Pepper

Preparation

In a small bowl toss tomatoes, olive oil and balsamic vinegar until coated evenly.

Arrange the tomato salad in two serving dishes and sprinkle each with half the feta, half the toasted pine nuts and half the basil. Add a pinch of salt and pepper. Taste and adjust any additional ingredients of needed.

Serve.
