Description

Pureed cauliflower and cheese by any other name. But you’d never know it. A great way for kids – of all ages – to get their veggies!

Ingredients

  • 1 head Cauliflower
  • 2 Tablespoons Exra Virgin Olive Oil
  • ¼ cups Diced Onion
  • 2 cloves Garlic, Chopped
  • 2 Tablespoons Sour Cream
  • 2 Tablespoons Cheddar Cheese, Grated
  • 1 Tablespoon Butter
  • 1 Tablespoon Milk
  • Salt And Pepper, to taste

Preparation

Cut cauliflower into florets and place into a steamer over boiling water. Cover and steam until fork tender, about 20-25 minutes.

Meanwhile, heat the olive oil in a skillet over medium heat. Saute the onion and garlic until translucent. Transfer mixture to food processor.

When cauliflower is fork tender, add to the food processor and add sour cream, cheese, butter and milk. Increase or decrease the milk depending on the size of the head of cauliflower.

Pulse until smooth. Add salt and pepper to taste. Serve warm.

You can also use bleu cheese instead of cheddar cheese. And, if you like, add herbs like chopped chives or rosemary at the very end.

I wonder if this would work on MY dead-set-against-any-cauliflower-unless-its-raw-and-drowning-in-ranch family! I’ll come back with the verdict after I make it!

I made this tonight and it came out a little soupy (my cauliflower was quite small) but oh man did it taste wonderful! I’ll be making this one again.

Thanks! I don’t know if it’s the sour cream or the magical combination of the garlic and onions and cheese, but I knew I’d landed on something when friends didn’t know they weren’t eating potatoes!

And for the life of me, I don’t know why the list of ingredients keeps messing up! I have ordered and re-ordered so many times, but cauliflower wants to hide at the end. I give up!

I have a friend that made this and it was absolutely divine! What a great way to get kids to eat their vegetables!

Cutting down on carbs so thought I’d try this. We did not miss the mashed potatoes at all. These were really good and satisfying. I will definitely make again!

Oh so yummy! I “made” my boys taste it, and now the youngest wants the leftovers in his lunch box tomorrow. To me, that’s a definite 5-mitt rating!

Out of the several mashed cauliflower recipes on Tasty Kitchen, I picked this one to try because it had onion and garlic in it. I served it to two people who were adamant that they didn’t like cauliflower – and they both went back for seconds! We all loved it.
