Description

Dill, butter , garlic and potatoes- Oh My!! This is my version of some potatoes I had at a restaurant. This is such an easy side dish and compliments steak or meatloaf nicely.

Ingredients

  • 3 pounds New Potatoes
  • 1 stick Butter
  • 3 cloves Garlic
  • 1 teaspoon Kosher Salt
  • 1-½ Tablespoon Dill ( Or Fresh Dill To Taste)

Preparation

Bring large pot of water to boil and add potatoes. Cook about 30 minutes or until tender. Drain.

In the meantime, melt one stick of butter in a skillet. Saute chopped garlic for a couple of minutes.Add dill and salt (to taste) and stir.

Add potatoes and break them up slightly with your spatula, stir until potatoes are completely coated in the butter mixture.

Made this tonight to accompany a steak dinner. We tasted it before plating and it was fantastic. However, it was not strong enough to stand up against the rich flavours of the steak. Would definitely make it again, but richer (i.e. more of the butter sauce).

Graduation deliciousness in a pan! is what I dubbed these dill potatoes after I fed 90 hungry High School graduates and their parents. They complimented the pig roasting on the lawn and Ree’s sister-in-law’s Roasted Corn Salad.
