Description

A simple and delicious way to use up those cucumbers!

Ingredients

  • 6 whole Small Or 2 Large Cucumbers, Washed And Sliced Thin, With Peel On
  • 1 whole Large Red Onion, Halved And Sliced Thin
  • Kosher Salt
  • 4 Tablespoons Sour Cream
  • 2 Tablespoons Fresh Dill, Roughly Chopped
  • 1 teaspoon Sugar (or More To Taste)
  • Black Pepper To Taste
  • 3 drops White Balsamic Vinegar, More Or Less To Taste

Preparation

In a large bowl, layer a third of the cucumbers and onions, then a sprinkle of kosher salt, and repeat layers two more times with the remaining cucumbers and onions.

Cover with plastic wrap and refrigerate for 1-2 hours. Then, with your hands, squeeze the excess moisture out of the cucumbers and onions and place them into a clean bowl.

In a small bowl; mix up the sour cream, fresh dill, sugar and black pepper. Add a little vinegar at a time and taste as you go. If you add too much vinegar just balance it out with a little more sour cream and a pinch of sugar.

Pour dressing over the vegetables, stir and cover it up with plastic wrap. Refrigerate for another 30 minutes. Stir again, season with salt and pepper (if needed) to taste and serve.

Such a great side dish, especially when you want something on the lighter side. Loved the crunch of the cucumbers and onions! I used plain Greek yogurt – slightly different flavor but the same texture. It turned out really good but will definitely try it with sour cream next time.

I made this salad to go along side some grilled burgers and it was nice and light and refreshing, went really well with the burgers. I think you could even pile some of this salad on top of a burger and it would be good! I used low fat sour cream, but otherwise followed it as written.
