Description

These are great as a side dish for dinner or brunch. I have also made them in a mini muffin tin as hors d’ oeuvres! The cottage cheese can be substituted for sour cream, but you will need to add salt if you do that. I have also added feta cheese to them, but they are great as is!

Ingredients

  • 1 bag Frozen Spinach (16 Oz.)
  • 3 whole Egg Whites
  • 1-½ cup Cottage Cheese (2%)
  • 1 cup Low Fat Shredded Mozzarella Cheese
  • 1 cup Shredded Or Grated Parmesan Cheese

Preparation

Cook spinach in the microwave according to package directions. Drain well.

In a separate bowl, combine egg whites, cottage cheese, and mozzarella cheese. Stir in spinach. Spoon mixture into lightly greased muffin tin (Pam works just fine). Sprinkle parmesan cheese evenly over the tops. Bake at 400 degrees for 30 minutes or until lightly browned.

Made these today and they are yummy. Only modifications I made were to use the whole egg, seasoned with some lemon pepper and added some sliced deli ham as my husband gets anxious if he has too many meatless meals! I can think of lots of ways to change this up as the base recipe is so good. Thanks for sharing,

I was really excited to try these but was disappointed. We thought they were pretty bland. Maybe with some “dressing up” I might make them again. Good base though and liked that they were vegetarian!
