A healthy and delicious alternative to French fries…you’ll never go back!

Ingredients

  • 2 whole Large Sweet Potatoes
  • 3 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper, Freshly Ground
  • Olive Oil Cooking Spray

Preparation

The key to making crispy sweet potato oven fries is soaking the cut fries in salty, warm water. It allows some of the water to leave the sweet potatoes that would make the fries mushy. (It’s called osmosis..I think).

Cut the sweet potatoes or yams into small fries, about 1/4 of an inch thick. When they are all cut, place them in a bowl with warm water and 2 teaspoons of the kosher salt. Fill the bowl with more water, so that all the fries are covered. Leave them to soak for at least 15 minutes, or up to an hour. (The longer they soak, the crispier they’ll be.)

Preheat your oven to 425 degrees F. Spray a baking sheet with olive oil cooking spray and sprinkle about 1/2 teaspoon of the remaining kosher salt and black pepper onto the pan. Drain the water from your bowl of fries and spread them out evenly on the baking sheet. Top with the remaining salt and pepper and spray the fries with a little more cooking spray.

Place them in the oven and bake for about 30-45 minutes, until the fries are crispy and browned. Flip the fries at least once during baking. If the fries are cooked, but not crispy, you can place them under the broiler for about a minute.

These oven fries are a great, healthy alternative to sweet potato fries at a restaurant. Once you make them, you’ll be addicted.

Hi Vikki, I am not sure why they didn’t crisp up for you. I have an old oven (no fancy convection for me) so maybe that has something to do with it? One thing I have to focus on is making my fries as thin as possible when I cut them. They cook faster and they end up crispier. I’m glad you liked them!

The flavor on these was great! I too had problems getting mine to crisp. I only soaked them for about 30 minutes but I will try to do them for longer next time. I also found a dip online we made with them and it was great! Mayo, lemon juice, cayenne pepper, and a clove of crushed garlic.

These were delish! I buy Sweet Potato spears from Trader Joe’s and normally toss them with Olive oil, Balsamic, garlic, oregano and chopped onion…place them in a foil pouch and bake for 25 minutes. Tonight I made your oven crispy fries. I used the convection/microwave instead of the oven so it wouldn’t heat the house up. They came out great but not real crispy (they were getting dark brown so I didn’t want to cook them any longer. I did the pre-soak with salt as you suggested also) I think next time I will either microwave them until tender than finish in the oven to crisp or just go for it and cook in the oven the whole time. Either way, I will for sure be making these again!
