Description

Orzo and mushrooms together in a cheesy wine sauce.

Ingredients

  • 2 Tablespoons Bacon Grease, Or Butter
  • ½ whole Onion, Chopped
  • ½ cups Mushrooms, Sliced
  • ½ cups Uncooked Orzo Pasta
  • 1 clove Garlic, Minced
  • 2 Tablespoons Butter
  • 1 cup Chicken Broth
  • ½ cups White Wine
  • Salt And Pepper, to taste
  • ½ cups Parmesan Cheese, Grated
  • ¼ cups Fresh Parsley, Chopped (1/8 Cup If Using Dried)

Preparation

Melt the bacon grease (or butter) in a skillet over medium heat. Stir in the onions and mushrooms, and cook until golden brown. Mix in orzo, garlic and butter. Cook and stir for 3-4 minutes, until butter is melted and orzo is coated.

Pour broth and wine into the skillet, and bring to a boil. Reduce heat to low. Season with salt and pepper. Cook for 7 to 10 minutes, or until orzo is done. Stir in the Parmesan cheese and parsley before serving.

Great recipe – super simple! The only thing is that between hubby and I, we finished it off as a side with pork chops :) So it only served 2, versus 6, for us!
