Description

A great new side dish for steak or chicken.

Ingredients

  • 1-½ cup Orzo
  • 1 Tablespoon Butter
  • 1-½ teaspoon Thyme, Fresh
  • 1 teaspoon Rosemary, Chopped
  • 2 cups Chicken Stock
  • ½ cups Water
  • 1 whole Lemon, Zest And Half The Juice
  • ½ teaspoons Salt
  • Pepper
  • ¼ cups Grated Parmesan Cheese (optional)

Preparation

Saute the orzo in a saucepan in butter over medium high heat. Stir until lightly browned and add in the remaining ingredients, except the cheese.

Bring to a boil and cover. Reduce the heat to low and cook for about 15 minutes or until the liquid is absorbed, stirring every so often.

Remove from the heat and let stand for 5 minutes. Stir in the cheese, season to taste, and serve.

Note: if you want to make this vegetarian, use vegetable stock or water in place of the chicken stock.

Oh my goodness I think I found a new favorite recipe. I LOVE the flavors of this dish. Using fresh herbs is key. I made it with the Panko, Parmesan and Parsley pork chops from this site. I will definitely be making this dish again and again!
