I needed a quick recipe to make use of some fresh cucumbers a friend gave me from his garden and this fit the bill. Really good and really easy. This is a great alternative to a regular salad with dinner.

This is really a nice take on the typical vinegar and cucumber thing popular in my part of the country. I’m taking it to a church function tonight, hopefully it’ll be a hit!

When it’s 100 degrees, this is refreshing and quick to make. We really enjoyed it and will make it again I know.

I also made this with cucumbers from a friend’s garden. It definitely tastes better when you leave the flavors to meld longer. Great way to use up cucumbers! I think I was hoping for more of a “dill” flavor, but still tasty!

My Grandma makes this salad but uses sour cream instead of mayo. Sooooo good!
