Description

These make excellent appetizers and I also like to serve Cilantro Lime Grilled Shrimp over top of them as a main course.

Ingredients

  • 3 whole Eggs (separate Whites And Yolks)
  • 1-⅔ cup Cooked Corn
  • ¼ cups Flour
  • ½ teaspoons Salt
  • ⅛ teaspoons Fresh Ground Pepper, Preferable White
  • 6 Tablespoons Vegetable Oil

Preparation

Beat the egg yolks well.

Add to the egg yolks the cooked corn (preferably fresh but I also use the frozen roasted corn available at Trader Joe’s).

In a separate bowl, mix the salt and pepper and then mix in the flour.

Stiffly beat the egg whites and fold into your dry mixture. Then add this to the egg/corn mixture to form your fritter batter.

Heat 6 Tablespoons of Vegetable Oil. Drop corn mixture by spoonfuls into hot oil. Turn once and continue cooking until firm & lightly browned.

I make these to serve my Cilantro Lime Shrimp Dish over but they’re also great as appetizers adding one or more of the following to your batter prior to cooking: red bell pepper, lump crab meat, jalapeno or diced green chilies.
