This was easy and quick to make. I used petite corn because that’s what I had on hand but the kernels were almost smaller than the diced onion. Next time I will use a larger kernel corn. Even so this was sooo delicious!

V easy to make and so tasty, a great dish for those holidays where you can’t find good corn on the cob but still want a summery corn dish. This was a total crowd-pleaser, everyone loved it, there were no left overs!

Great flavor of the corn and bacon together, with a perfect amount of pepper and salt. My entire family loves it and it will be a staple in our house for the side dish.

This was so simple to make and so good. I love the bacon with the corn. I did use corn off the cob. This will be a new side that I will make frequently.

Replace the green onion with sweet green pepper and you have Indian fry corn.

rghawki–I was going to say the same thing, except we call it Mexican Corn! And just by coincidence, it’s on tonight’s menu!

This dish tastes so good. If we would have had any leftovers, I think they would have been great for breakfast mixed in with some hash browns. But, we didn’t have any leftovers. We just couldn’t stop eating it!

I will be trying this asap! My family loves corn and I am sure this recipe will be another great way to serve it. (and I will try kim4wsl’s idea of putting it in hash browns IF we ever have leftovers!!)

OMG! This recipe is AWESOME! I added fresh sliced jalapenos for an extra kick…and WOW! I served it with BBQ chicken breast and it was OUTSTANDING!!!!

Yes, I think it would be fine with canned corn. Just drain well.
