Description

Copycat Near East chicken-flavored couscous. Bonus fresh veggies and toddler-approved!

Ingredients

  • 2 Tablespoons Olive Oil
  • 1  Large Carrot, Chopped
  • 1 stalk Celery, Chopped
  • 1 clove Garlic, Minced
  • 1-¾ cup Chicken Broth
  • 1 cup Couscous, Uncooked

Preparation

Heat oil in a large pan on your stove top. Add carrots and celery and saute until softened, about 8–10 minutes. Add garlic and cook just until fragrant, about 30 seconds.

Add chicken broth, scraping up any brown bits from the pan. Let come to a simmer, then turn off the heat and add couscous. Place a lid over the pan and let sit for 5 minutes.

Fluff couscous with a fork and serve warm.
